Red Cabbage Slaw

Here is a lovely side to any sweet dish. It is tangy and flavorful and has a fantastic deep purple color. The only thing that is important to remember with this dish is that the cabbage and the carrots should be chopped nice and fine, or it will end up too crunchy.

Also, if you want to make this for a picnic, it travels very well and is perfectly tasty even at room temperature.

¼ cup sugar

¼ cup apple cider vinegar

½ tsp mustard powder

¼ tsp salt

1 Tbsp olive oil

4 fresh sage leaves, finely chopped

½ small head of cabbage, shredded

1 carrot, grated

1)      In a large bowl, mix everything except the cabbage and the carrots.

2)      Add the cabbage and the carrots and toss to coat evenly.

3)      Refrigerate for at least 30 minutes and toss again before serving.

I served this with the caramel apple chicken. The purple was a nice touch for the Halloween theme.
