Caramelized onion orzo

This is an elegant and delicious side for our sweet fennel scallops. If you made them and the Pear and bleu cheese purses you may notice you have ½ yellow onion and ½ red onion, this works out perfectly for this dish as we need one onion. The mix of red and yellow will add a nice flavor and a little much needed color. No tricks here just caramelize the onions well.


1 medium onion

2 Tbsp salt

½ cup orzo

1 handful of parsley, finely chopped

1 oz asiago or other strong cheese, grated


1)      Bring about 4 cups of water to a boil.

2)      Add the orzo to the boiling water and cook until al dente, about 10 minutes.

3)      Strain the orzo.

4)      Caramelize the onions well.

5)      Mix the onions, orzo, parsley and cheese. Add more cheese to adjust to your taste.
