Caramel Cheesecake Brownies

This is the last week of our Facebook brownie contest, and a winner will be declared at the end of the day on Friday. For today’s brownies, we have a batch dedicated to our fan Christine who recommended a few types of cheesecake brownies. In her honor, today we will be making Caramel Cheesecake Brownies.

These brownies are amazingly rich; they are not for the faint of heart. If you tried our bacon brownies, you know how rich the brownie portion is since we started with the same base recipe. Because of the added sweetness of the caramel, we reduced the sugar in the base recipe by 1/2 cup. Add atop that a layer of caramel and cheesecake, and you have a brownie that appeals to the hedonist in us all. Just make sure to have a glass of milk nearby!

There are many ways to make these, all with the same recipe. I like to layer the brownies, then the caramel then the cheesecake. I then drag a skewer through all the layers to mix them slightly and make the marbled look on top. One variation that I’ve seen is to layer the brownie, caramel, then cheesecake, as I did, but to reserve some brownie batter. Before cooking, you can use the extra batter to pipe designs on top of the brownies, forming a black and white drawing when they’re baked.

However you choose to decorate them, you will love these brownies. If you want some extra caramel flavor, you can add some extra in the middle or drizzle some on top.

This recipe make a thick 9”x9” pan of brownies.  You could easily make 24 (1.3” x 2.25”) or more brownies from this batch since a little goes a long way.


2 1/3 sticks unsalted butter

4 oz unsweetened chocolate, chips or coarsely chopped

2 oz bittersweet chocolate, chips or coarsely chopped

5 large eggs

2 1/3 cups sugar

1+ ½ tsp vanilla extract

1 cup all-purpose flour

1tsp salt

8 oz cream cheese


1)      Pre-heat the oven to 350 degrees

2)      Grease a 9”x9” baking pan.

3)      Melt the chocolate and 2 sticks butter in a heatproof bowl over steam until just melted. Alternatively, you can melt it in the microwave, but just make sure to stir it every 10 seconds.

4)      Add 1 c sugar to the melted chocolate and mix well.

5)      In a mixer with a whisk attachment, add 1c sugar and 4 eggs.  Mix until just barely blended.

6)      Put half the egg mixture in a separate bowl, and add the chocolate mixture one spoonful at a time, mixing well. Add it slowly at first to prevent cooking the eggs, but after about 4 spoonfuls you can just pour the rest of the chocolate in and mix well.

7)      Beat the other half of the egg mixture until it has doubled in volume.

8)       Fold the rest of the egg mixture into the brownies.

9)       Gently fold 1 tsp vanilla, salt and flour to the chocolate mixture, until the flour is just incorporated. Set aside.

10)   With an electric mixer, make the cheesecake topping by mixing cream cheese,  1/3 cup sugar, ½ tsp vanilla, and 1 egg until nice and smooth. Set aside.

11)   Make the caramel by heating ½ c sugar in a small pot until deep brown.

12)   Into the hot caramel, add 1/3 stick butter and mix well, but be careful of splattering.  Set aside.

13)   Into the pan, pour the brownie mix and level out smoothly. You can reserve some brownie mix to put on top of the cheesecake if you’d like for the design.

14)   Pour the still-hot caramel onto the brownie mix, spreading it as evenly as possible.

15)   Top with the cheesecake and spread evenly, making sure to get the corners.

16)   To make a design, drag a skewer or toothpick through all the layers, moving it up and down to slightly mix the layers.

17)   Bake for about 40 minutes, until a toothpick inserted in the middle comes out mostly dry.

18)   Let sit for about 30 minutes before eating.

19)   Serve and Enjoy!

  • First let start off by saying that I normally do not enjoy sweets, but every now and then a desert comes around that changes that preference. One fine example is this caramel-cheesecake-brownie. I had the privilege of tasting one of these brownies the other day and I was blown away! If you like brownies, and cheesecake (two sweet dishes that I actually do enjoy from time to time) you will LOVE this fusion of the two! I don’t normally gave a birthday cake on my bday because I don’t really enjoy cake and sweets, but this dish really changes my opinion and I plan to devour this dish regularly, not just on special occasion! Thanks Evan for the delicious recipe! I give it a 10/10, and I NEVER score anything that high!
