
Our fan Niki was enjoying champagne mangoes and asked if we had any recipes. So for her enjoyment, we are going to make two champagne mango recipes, starting today with a Mango Strawberry Crumble. If any of our other readers would like me to post recipes for their favorite dishes or certain ingredients, let me know!
For both this and the next recipe, we used champagne mangoes, which are smaller, slightly more acidic, and slightly less sweet mangos. They are yellow skinned and soft when ripe and can go bad fairly swiftly if left sitting out, so use them or lose them. If you cannot find champagne mangoes, just replace them with regular mangoes and use a little less sugar. Also, for measuring, 2 champagne mangoes have about the same amount of fruit as 1 regular mango.
These crumbles are very forgiving, as they can stay in the oven for a long amount of time without burning and they cook relatively quickly. One thing I did not expect was how much they bubbled up on the edges, so be careful not to fill them to the top. You can make this in a variety of containers, as long as you use something oven safe. I recommend either a loaf pan or individual ramekins.
One recipe should make enough for a loaf pan or 4-5 larger ramekins.
Ingredients:
4 champagne mangoes
½ lb strawberries
¼c sugar + more as needed
1 Tbsp cornstarch
½ stick butter
½c sugar
½c oats
¼c flour
Directions:
1) Preheat the oven to 350 degrees.
2) Cut the strawberries and mangoes into ½ inch cubes.
3) Add the sugar to the fruit and toss to coat.
4) Taste the mixture, and if it needs more sugar, add about 2 Tbsp at a time, tasting until it’s to your liking.
5) Add the cornstarch and mix well
6) In a separate bowl, mix the butter, sugar, oats and flour.
7) By hand, mix the topping together until it has a consistency of large breadcrumbs.
8) Fill your container with the fruit mix and level it out as best as you can.
9) Cover with the crumble topping.
10) Place in the oven and cook until the topping begins to brown and the edges begin to bubble, about 20-30 minutes.
11) Let cool before eating; it is as hot as the sun when it comes out of the oven!
