
After all the fun and complexity of brownie month it is time to do something super simple, versatile and delicious. We will be making an olive tapenade, which is basically a minced olive spread. I like this dish a lot. It is a good one to show off, and it is one that is easy to make your own. I am going to go through my version of tapenade, but I want you to try mixing it up and making a version of it that you love.
Personally, I like a very simple version that only has 4 ingredients: olives, hot peppers, garlic, and tomatoes. This makes a very strong olive flavor, with a slightly spicy acidic kick. It is actually a pretty simple flavor, but I like it a lot. When you make it, you can go for this recipe, but I think you will have more luck modifying it.
To make it your own, you can add cheese or oil to give it a smoother, milder flavor. If you like it very strong, add some vinegar or spices. If you want to change up the flavor, add some herbs or spices. If you don’t like the peppers or the tomatoes, take them out. Even the olives you choose will make a big difference, so choose olives you like. Basically, you can do anything to this and it will probably taste good. Let me know what you try and how it works.
When I made this, I used it for a spread on sandwiches, but it is just as good as a dip for vegetables or crackers. I like it on roast beef or salami sandwiches, with some provolone cheese on nice bread.
As a spread it should make enough for 6-8 sandwiches, and as a dip it makes about 1 cup.
Ingredients:
¾c olives, mixed green and kalmata
¼c roasted tomatoes
½ Serrano pepper
1 clove garlic
Directions:
1) Place all ingredients in a food processor.
2) Pulse for a few seconds until a coarse paste.
3) Serve and enjoy! (yup it’s that easy)















I am not usually a fan of olives but this looks like something I want to try! Its brilliant!
