I love my salads. Fresh veggies with tart acids, what could be better? Today we will be making a salad that basically just mixes all of my favorite ingredients. It is a cherry and fennel salad, with a tart cherry balsamic dressing.
Although I have made this dressing several times and really like it, it is still a bit of a work-in-progress and I would love some feedback. The dressing is sweet, tart, and light, and I think you will love it, but let me know what you think and how you adapt it.
One quick vinaigrette tip: mustard powder is an amazing emulsifier. When you add a little to a vinaigrette, it helps keep the oil and vinegar from separating and therefore makes a much smoother dressing.
For those who don’t know, I love fruit, and right now, for a brief moment, cherries are in season. They won’t last long, so this recipe uses dried cherries. I would highly recommend using fresh while they are available. If you are feeling really daring, you can even make your own cherry juice by simmering cherries in enough water to cover until they break down and make cherry juice. Then cool it down and dilute with water if it starts to gel. I don’t do this since I can get 100% cherry juice at my local organic grocer; make sure to check the ingredients when you buy the cherry juice though, as it is typically mainly apple juice.
This should make enough salad and dressing for 4 small appetizer portions or 2 entrées.

1Tbsp balsamic vinegar
2 Tbsp 100% cherry juice
¼ tsp mustard powder
¼ tsp salt
½ tsp sugar
¼ c olive oil
1 bulb fennel, thinly sliced
1 handful dried cherries or fresh pitted cherries
1 oz feta cheese
2 oz toasted almond slivers
6 oz mixed greens
1) Mix all the ingredients well, except the oil, in a bowl.
2) Slowly drizzle in the oil while whisking vigorously until well incorporated.
1) Mix all of the ingredients in a large bowl.
2) Drizzle with the dressing and toss to coat evenly.
